Ingredients:
Spinach - 1 small bunch (Palak leaves)
Button mushrooms - 1 small can
Rice
Onion - 1 (chopped into small pieces)
Garlic - 4-5 flakes
Green chillies - 4 (cut into small pieces)
Salt as required
Pulav masala - (ready packet) -2 tsps
Ginger - small piece grated
Cashew nuts - 10-12 for garnishing
Coriander leaves for garnishing
Jeera - 1 tsp
Method:
Take required amount of rice in a vessel wash nicely.
Take the bunch of spinach and cut into small pieces and wash nicely.
Pour the can of mushrooms in a vessel and wash nicely.
Cut the onion, garlic, green chilly into small pieces.
Take a kadai pour oil and season with jeera, add the onion pieces, garlic and green chillies
and saute nicely.
Add the cut spinach and cook .
Add the button mushrooms and mix nicely.
In the mean while cook rice separately drain out the starch water.
Now add salt,grated ginger pulav masala to the spinach -mushroom and mix nicely.
Add the cooked rice and cook for 5 more minutes by mixing and stirring with the spinach
and mushroom mixture.
Now fry cashew nuts in a little ghee and add to the rice mixture.
Garnish the spinach mushroom rice with coriander leaves.
The spinach mushroom rice is ready to be had with any raita of your choice.
