Rice rava upma pidi kozhukattais /Dumplings


Ingredients:
Raw rice rawa - 1 big cup
Urad dal - 1 1/2 tsps
Mustard seeds - 1 1/2 tsps
Dry red chillies - 3-4
Hing - 1/4 tsp
Curry leaves - few
Salt as required
Oil
Method:
Take a kadai pour oil in it and add mustard seeds,urad dal,dry red chillies, hing and curry leaves.
Now after the mustard seeds splutter add the rice rava and stir fry for 2-3 minutes
Add salt and mix nicely.
Add 3 measures of hot water to the rice rava and close it with a lid.
After 5 minutes open and stir the rava by turning it nicely.
You can even add some more oil to the mixture and mix nicely.
Now the raw rice upma is ready.
How to prepare upma kozhukattai:
After the upma gets lukewarm take some little by little in your hand and make balls by pressing with your fingers.
Now take the idli stand and place the balls one by one on the mould.
Now pour some water in the pressure cooker and place the idli stand inside with the balls
Let it steam for 20 minutes and then it will become solid.
Now you can put off the gas and remove the stand and keep aside.
The upma dumplings are ready to be eaten either with some chutney, sambar, or kathrikai puli gothsu which I shall post some time later.

Mixed Vegetables broken Wheat Rava Upma

Ingredients:
Wheat Rava - 1 cup
Urad dal - 1 tsp
Mustard seeds - 1 tsp
Mixed Vegetables - 1 cup
Hing - 1/4 tsp
Curry leaves - few
Coriander leaves - few
Green Chillies -2-3
Salt - as required
Oil

Method:
Take a kadai and season with mustard seeds, urad dal, hing and curry leaves and onion with little oil.
When the mustard seeds splutter and the onion is stir fried and golden add the Wheat Rava and stir fry with the seasonings.
Now add mixed cut vegetables like carrot,beans, peas and you can add corn also and stir fry with the Wheat Rava.
Now add salt and pour 2 cups of hot water on the Wheat rava with vegetables and close the lid.
After sometime open the lid and pour 2-3 tsps of ghee on the cooked upma and mix nicely.
Now you can add cut coriander leaves and mix nicely.
Now the Wheat Rava upma is hot and ready to be served with any chutney or pickle of your choice

Rava (Semolina) khichdi

Usually we make rava upma, rava dosa etc but this is rava khichdi which is a bit different and is very delicious as a snack , for breakfast or you can make it in a jiffy even when you are expecting someone who visits you suddenly. We have it very often and this is my daughter's favourite.Rava actually is not harmful and is healthy and easy to prepare also. I shall take you on a small journey to go through my recipe.


Ingredients:
Rava (semolina) -1 cup
Onion -1 medium sized
Green chillies -4-5
Fresh green peas (muttar) -1oogms
Tomato -1-medium sized
Ghee -2 tblsps
Curry leaves - few
Water - 3-4 cups
Salt - as required
Coriander leaves - for garnishing

Method:
Take ghee ia pan, add mustard seeds,jeera,curry leaves and green chillies.
When mustard seed splutters add onions and fry well then add the tomato and stir fry for some time
Add the rava and roast. Add some salt and mix well. put the green peas in it.
Add boiling water to the rava and mix well to make sure there are no lumps.
close it with a lid , and after it is cooked till the consistency becomes thick, garnish with chopped coriander leaves.
This dish can be had with tomato onion chutney or coconut chutney. Serve it hot

Semolina (Rava) squares




Ingredients:
1 cup rava (semolina)
1 cup sour curd
salt as required
1/4 tsp soda bicarbonate or 1 tsp eno fruit soda
1 tblsp oil
3 green chillies (ground to paste)

For Seasoning:
1 tblsp oil
1 tsp mustard seeds
4-5 curry leaves
Finely chopped coriander leaves for garnishing

Method:
1.Put a large vessel with 3 inches water to heat.
2.Place a stand which goes above water level.
3.Place a shallow plate with vertical edges atleast 1' high, on the stand after greasing it.
4.Mix rava, salt, green chillies paste and curds in a bowl.
5.Add 2 tblsp water beat well with a spatula.
6.Mix oil and soda into the batter mixing very well till frothy.
7.Pour the mixture into the prepared plate.
8.Heat the prepared vessel or a cooker covering with a fitting lid.
9.Steam and allow to cook for 15-20 minutes.
10.After it is cooked after sometime remove the plate.
11. Now cut it into squares with a greased knife.
12.Heat oil for seasoning.
13.Add mustard seeds and after it splutters add curry leaves.
14. Spread the seasoning over the squares.
15.Remove the squares from the plate and arrange in a serving dish.
16. Garnish with coriander leaves.
17. Serve either with green coriander chutney or coconut chutney.

Actually this is a small mini version of our usual idli only the ingredient is semolina.
This is our favourite dish which can be had as a light snack in the evenings.
