Rava Idly and Coconut and Coriander Chutney


Rava Idli
Ingredients:
Rava (sooji) - 1 tumbler
Sour Curd - 1 Cup
Cashew nuts (broken) - few
Curry leaves broken into small pieces
Soda bicarbonate - 1/4 tsp
Green chillies - 2 cut into small fine pieces
Ginger - 1 small cut into fine pieces
Salt - as required
Coriander leaves - cut into small pieces.
Method:
Take a kadai and roast the rava nicely.
Now put the roasted rava in a vessel and put salt and sour curd and mix nicely into idli batter consistency.
Now season in a little oil with mustard seeds and chana dal and add it to the batter.
Add broken pieces of cashew nuts, green chillies, curry leaves and coriander leaves and mix nicely.
Add soda bicarbonate and mix nicely.
Now take the Idli moulds and pour the rava idli batter into the 4 hollows of the mould and steam it in the pressure cooker for 25 minutes.
After 25 minutes off the gas and remove and keep the cooked idlis outside.
When it is lukewarm remove the idlis and put in a vessel.
The Rava idlis are hot and ready to be eaten with coconut/coriander chutney.
Green Coriander leaves and Coconut Chutney
Ingredients:
Fresh grated coconut - 1 Cup
Green Coriander leaves- 1 small bunch
Green Chillies - 2-3
Sour curd - 3 Tblsps
Salt - as required
Urad dal - 1 tsp
Mustard seeds - 1/2 tsp
Hing - a pinch
Dry red chillies - 2
Method:
Take a mixer grinder and put grated coconut and coriander leaves,salt, green chillies and sour curd and grind nicely into chutney.
Take a kadai and season with mustard seeds, urad dal and dry red chillies in 1 tsp oil and pour over the chutney.
The coconut/coriander chutney is ready to be had with rava idlis.
