Brocolli is usually incorporated in Chinese cooking like fried rice, noodles etc,but I
thought why not incorporate it in our traditional south indian cooking too. I made
Brocolli parupu usli and now I decided to make kootu which came out excellent and
all of us enjoyed its taste thoroughly.
Ingredients:
Brocolli - 1 medium sized
Chana dal - 1 tblsp
Moong dal - 1 1/2 tblsps
Salt as required
Curry leaves - few
Hing - a pinch
Coriander leaves for garnishing
Roasted peanuts - 1/2 tblsp
Jeera - 1 tsp
Roast and grind to a paste:
Urad dal - 1 tsp
Dry red chillies - 5-6
Methi seeds - 1/2 tsp
White sesame seeds - 1 tsp
Black peppercorns - 1 tsp
For seasoning:
Urad dal - 1 tsp
mustard seeds - 1 tsp
Hing - a pinch
Ghee - 1 tsp
Method:
Cut the brocolli florets into small pieces and wash nicely.
Take a vessel and put the brocolli pieces with chana dal and moong dal and some water and
pressure cook for about 15 minutes
After the brocolli is cooked remove from the cooker.
Take a kadai and roast urad dal, methi seeds, dry red chillies,peppercorns and sesame
seeds.
Now wet grind the roasted items with roasted peanuts and jeera into a paste and mix with
the cooked brocolli.
Add salt and curry leaves and cook on a low flame for 5 minutes.
Now garnish with finely chopped coriander leaves
Take a kadai put ghee into it and season with mustard seeds, urad dal and hing and pour it
on the kootu and mix nicely.
The brocolli kootu is now ready to be had either with plain rice and ghee or even with
phulkha chappathis which will taste very good.
