Keerai Vadai /Spinach Vada



I love to incorporate spinach in as many dishes as possible since it is healthy

and tasty too and I am an avid spinach fan right from childhood. I like to taste

all the varieties of spinach. I have made vadai with spinach which tastes lovely

and very delicious too.


Ingredients:

Raw rice - 1 cup

Toor dal - 1/2 cup

Chana dal - 1/2 cup

Urad dal - a fistful

Dry red chillies - 7-8

Hing - a pinch

Spinach (Arai keerai) - 1 small bunch

Salt as required

Oil for frying


Method;

Soak the rice and dals together for 4-5 hrs in water.

Drain the water and put the rice and dals and the dry red chillies in the mixer grinder

and grind into a coarse paste.

After grinding pour the batter in a vessel add salt, hing and 1 tsp ghee for crispness.

Now cut the spinach leaves into small pieces and add in the batter.

Mix all the items nicely.

Take a kadai and pour some oil and heat on the gas.

When the oil is sufficiently hot, keep a small vessel of water and wet your left palm.

Take a small portion of the batter and flatten it and slip it into the oil.

Let it cook on one side and then flip it on the other side and cook till golden colour.

When the vadais are cooked nicely, remove and put on a plate.

The spinach (keerai vadai) is hot crispy and ready to be eaten.

You can enjoy these crispy vadais with a hot sip of tea.

  17. Amma used to make adais a lot and used cilantro in place of keerai - and it tasted fab! But my kids and hubby are not uberly fond of adai - so I rarely get a chance to make them -- should revive the dish at my place :) thanks dear and happy weekend!
