Button mushrooms - 1 tin
Brocolli - 1 small bunch
Baby corn - 5-6
Brinjals - 4-5
Onion - 1
Garlic flakes - 5-6
Green chillies - 2-3
Tomato - 1 small
Chole masala powder - 1 tsp
Garam masala - 1/2 tsp
Curry leaves - few
Salt as required
Wash the button mushrooms nicely and cut into halves.
Break the brocolli into florets.
Cut the baby corn length wise.
Cut the baby brinjals length wise.
Cut the onion into pieces, and the green chillies into small pieces.
Take a kadai, pour oil and add the cut onion pieces and green chillies and saute nicely.
Now grate the garlic flakes and cut the tomato into small pieces and add curry leaves and saute.
Add the cut brinjals and mix nicely with the seasonings and cook.
When the brinjals are half cooked, add the brocolli florets,mushrooms and baby corn
and mix nicely and cook.
Add salt,Cholay masala, garam masala and mix nicely and stir and cook.
Let the veggies be half cooked to give it a crunchy taste.
Now remove the half stir fried veggies from the fire and transfer to a bowl
The button mushroom,brocolli, baby corn and brinjal stir fried veggies are hot and ready
to be eaten.
