Potatoes - 1/4 kg
Small violet brinjals - 1/4 kg
Oil
Garam masala powder - 1/2 tsp
Onion - 1 big chopped
Red chilly powder - 1/2 tsp
Salt as required
Finely cut coriander leaves - for garnishing
Tamarind extract - 2 Tblsps or ( tamarind powder)
Tomatoe - 1 chopped
Dry roast and powder:
Coriander seeds (daniya seeds) - 2 tsps
Poppy seeds - 2 tsps
White sesame seeds - 2 tsps
Roasted peanuts -2-3 tsps
Add 1 onion and grind all the items together coarsely.
Method:
Cut the brinjals lengthwise.
Steam cook the potatoes peel the skin and cut into cubes
Take a kadai and put both the vegetables with oil and stir fry till they are cooked.
Keep the veggies aside after they are cooked.
Take a kadai and add chopped onions and stir fry.
Add chopped tomatoes and stir fry.
Add ground paste and stir fry nicely.
Add garam masala powder, salt,chilly powder and tamarind extract or tamarind powder (available in the indian grocery shops)
Now add the fried and cooked potatoes and brinjals and mix nicely.
Cook for few minutes and remove from fire.
Garnish with coriander leaves .
Alu baingan sabzi is hot and ready to be had with phulkas,parathas or poories.
