Rice - 1 cup
Moong dal - 1/4 cup
Spinach - 1 bunch
Green chillies - 6
Onion - 1 big
Tomatoes - 2
Brinjals - 3
Ginger - 1/2 inch piece
Garam masala powder - 1/2 tsp
Ghee
Jeera - 2 tsps
Cashew nuts
Curry leaves
Method:
Cut onions tomatoes and brinjals finely.
Dry roast rice and dal separately. Allow it to cool.
Cut ginger into small pieces.
Slit green chillies into two.
Cut spinach as fine as possible.
Heat oil and fry green chillies, onions, brinjals and tomatoes.
Now add spinach and cook.
Add ginger,garam masala powder salt and 2-3 cups of water.
When it starts boiling add rice, dal and keep in pressure cooker in a vessel.
Cook for 15 minutes,remove the lid.
Now take a kadai and put ghee and fry jeera , cashewnuts and curry leaves and add to the cooked pongal.
Mix well and pour rest of the ghee on top and serve hot.
